Carrot Rice


I have always had carrots either  in the form of salad or sweet. Recently i tried this different version of carrot recipe .This recipe has bunch of all nutrients. A perfect  fulfilling meal. Try this out.



 
Ingredients


 -         Basmati Rice  1 cup

 -        Grated Carrots  1 cup

 -        Fresh/ Frozen Cut Vegetables 1/2 Cup( Peppers,Brocilli,Beans,Asparagus,Cauliflower)

 -        Onion 1/2 Cup Chopped

 -        Garlic Chopped 1 table spoon

 -        Ginger Chopped  1/2 tea spoon

 -        Tomatoes Chopped 1/2 Cup

 -        Cumin Powder 1 tea spoon

 -        Cinnamon small piece

 -        Cloves 2 No's

 -        Raisins 12

 -        Red Chilli Powder 1/2 teaspoon

 -        A pinch of turmeric

 -        Oil / Butter 2 tables spoon

 -        Salt according to taste


 Method


 Boil the rice Preferably in a rice cooker ( 1 Cup rice = 2 cup water )

 In a pan pour some oil or butter

 When the oil gets heated add cloves, cinnamon and turmeric powder

 Add Ginger Garlic paste and Chopped onions and sauté till the raw smell goes over

 Add the Grated Carrots and the cut vegetables and let it cook for some time

 Add Tomatoes and raisins and heat it for a while

 Add chilly powder, Cumin powder ,salt and mix well

 Add the cooked rice and mix it properly

 Carrot rice is ready to eat

    I chanced upon ur blog ... you have a nice space....i love ur carrot rice looks yummy .... by adding so many veggies to carrot rice is very healthy and sounds tasty...i will this version too...i liked ur pineapple curry....
